There are days when you feel like baking but don’t have much time. This is a cake for those days. Simple but utterly soft and delicious, this cake is perfect for tea times, to take along when visiting friends, and for just gazing at. I found the recipe on a website called jensfavouritecookies.com and it’s so perfect that I really did not have to do anything to change it. It has buttermilk in it and maybe that’s what makes this cake super soft. I didn’t have buttermilk so I just mixed yoghurt and water about 1:1 and instead of butter, I used vegetable oil.

 

 

 

So, here’s the recipe…

What you’ll need

1/4 cup oil (which I used. You can also se the same quantity of softened butter)
3/4 cup powdered sugar
1 egg
1/2 tsp almond essence
About 1 – 2 tsp of orange zest
1/2 tsp salt
1/2 baking powder
1 cup flour
1/2 cup buttermilk
1/4 cup sliced almonds

Here’s how you go about: Blend oil and sugar together till well mixed. Add the egg and keep mixing. Add almond extract and the zest and mix well. Add salt, baking soda, and baking powder and mix. Add the flour alternately with the buttermilk and mix till they are just combined. If you do not have buttermilk, just mix water and yoghurt to get 1/2 cup. Grease and dust a pan (about 9′ or 8′). Pour the dough evenly in the pan. Now sprinkle your  sliced almonds on top and then dust with a little powdered sugar. You need to now bake in a preheated oven at 170-180 degree Celsius for 20-25 minutes, until a toothpick inserted near the centre comes out clean. Please keep checking after 20 mins. takes just about 22 mins in my oven.
