Mushroom Cheesy Quiche

6 potato baskets, 8 button mushrooms, 1 onion, 3 eggs, 2 cubes of cheese grated (use according to your taste), salt, pepper and oregano to taste. To make 6 quiches.

Quarter button mushrooms and finely chop onions. Heat a little vegetable oil and butter in a pan and add the onions. Fry till tender. Add mushrooms. Saute. Add a little oregano, pepper and salt. Keep aside. Use the potato baskets given in previous post to line the cups of a muffin tray. Beat one egg and mix with the mushroom-onion mix. Divide this mixture among the 6 cups. Beat the other two eggs and add grated cheese. Season. Pour over the mushroom till baskets are about 3/4th filled.

Bake at 350 deg F (180 deg C) fro abt 13 minutes (I know it’s weird but for me exactly 13 minutes is perfect…a little more and the quiche becomes dry…
